zuppa d'orzo by me




I'm still here -- blogging every single day in the month of November.

I made this hearty zuppa d'orzo about a week ago.  (Yes, I did it.  Me.  The person who usually doesn't do the cooking in the house.) The lunch portions in the freezer are already down to one. With turkey day looming (more time for me in la cucina) & a quick trip scheduled this weekend, the next batch will have to wait.

Yummy! We love orzo. I make orzo soup, Corrado loves orzo in his salads. He also is a big fun of orzo coffee.

As I scrolled down that gorgeous collage, I couldn't wait to see the recipe. And then there wasn't one!

Ack! I didn't follow a recipe, just threw together the things pictured (a few carrots, some celery, an onion) and let it cook on low until I liked the consistency of the beans! I put in some salt and pepper too. I don't know if the Brodo stuff (kinda like a boullion cube in powder form) is really needed; I just noticed that we had some, so I added it because I didn't start with broth. I didn't use meat for flavor, but you likely could with great results.

Serve hot with generous amount of parmesan & olive oil.
