summer sunday: cooking with Kris & Cory in LA

The people of South Louisiana take food and cooking as seriously as any Italian that I've met.  And the food . . . well . . . it's just good . . . it's better than good . . . it's the best in the country . . . the best in the world.  Shhh . . .  don't tell the Italians, who feel the same way about their cuisine. 

"Pastalaya" is a relatively new dish on the Cajun scene; it's jambalaya with pasta instead of rice.   It's not pasta. (An Italian would cry foul with the amount of time the pasta is cooked!) Oh. . . and that's not any regular sausage, it's andouille.  Since moving to Italy, I've learned that there is no substitute for andouille & it is mostly responsible for the unique taste in Cajun dishes that contain it.

We pack it in our suitcases when we return in the summer months.  When we're done with that, my dad ships it to us via the USPS.  No one seems to mind. I prefer Bailey's Andouille to others.



The best part of a meal in South Louisiana is the chance to be at the table (better if it's in the kitchen) together;  this was a Wednesday after work, I think.  I miss them.



Though,  Maddy might tell you that the absolute best thing about any of this is the chance to be with her cousins and experience the free-range life they are so lucky to live.  They are nestled in an enclave of family homes;  I call it "The Compound."  It works (well) for them.

Summer Sunday is DONE!   I still have lots of pictures from the summer to share and perhaps I will some day.  It's become a chore in the last couple of weeks.  Blogging is for fun, so when it starts to feel like work. . . basta!

See you tomorrow though. . . it is still November (to which I am likewise ready to say: basta!).

I have to say I am not much of a spicy kind of gal, but I love southern cooking and that includes Louisianna. My favorite L.A. dish is Bananas Foster!

I am with you on the andouille! But not so sure about the pastalaya...how was it? With the weather cooling off I am feeling a little homesick and craving gumbo. Might need to make some this week.
